Bäcker, Brot und Brötchen
Vor seinem Backofen steht der Bäcker Hans Bapl und „schießt" mit einer langen Holzschaufel Brot in den Ofen. Das Volkacher Salbuch enthält eine Bäckerordnung von 1415, in der die Her-stellung des Grundnahrungsmittels Brot genau geregelt ist. Über die Vorschriften wachten zwei Ratsherren und zwei Bäckermeister. Im Mittelalter lag der Brotbedarf meist viel höher als heute. Es wurden Roggen aber auch Gerste, Hafer, Rispenhirse, Dinkel, Emmer, Einkorn und Weizen verbacken.
Baker, Bread and Rolls
In front of his oven stands the baker Hans Bapl, "shooting" bread into the oven with a long wooden peel. The Volkacher Salbuch contains a baker's ordinance from 1415, in which the production of bread is precisely regulated. Two city officers and two master bakers were in charge of the regulations. In the Middle Ages the bread regulations were mostly more stringent than they are today. Rye was the primary grain used in baking, but barley, oats, millet, spelt, emmer (wheat), einkorn wheat, and wheat were also used.
