1. Smoke House Marker
Inscription.
The main source of meat for early families was hogs almost the entire animal was used. The most commonly cured or smoked parts were hams shoulders, and middlin' meat (bacon and salt pork).
This smoke house was built before 1862, by Jesse Fortinberry. Logs around the base are charred showing that the building was set afire at some time. Jesse used clapboards to cover the cracks and make the smoke house taut.
Prepared meat and stuffed sausage were hung from the three joists of the smoke house then, a fire was built on the dirt floor. Green chips of hickory or oak were used to keep the smoke billowing from two to six days, or until the meat had a brown crust. Hams usually took about two days to be smoked.
