In 1972, Herb Peterson and his assistant, Donald Greadel, the operators of a McDonald’s franchise in Santa Barbara, asked McDonald's President Ray Kroc to look at something. It was, Kroc wrote:
“... a crazy idea — a breakfast sandwich. It consisted of an egg that had been formed in a Teflon circle with the yolk broken, and was dressed with a slice of cheese and a slice of grilled ham. It was served on a toasted and buttered English muffin. The advent of the Egg McMuffin opened up a whole new area of potential business for McDonald's — the breakfast trade.”

1. Preparation of an Egg McMuffin
When the Egg McMuffin was a new item at Southern California restaurants, I learned to prepare them at my first job. An egg was cracked into a heavy ring placed on the hot griddle, then slightly scrambled. The ring was invented to form the egg into the right shape and size to fit on an English muffin.
