When the Loose-Wiles Biscuit Company opened this mass production bakery in 1912, a newspaper article noted that the ovens were on the top floor, "above the fly zone and away from the dust that blows into the windows nearer the streets."

With its modern machinery, the article pointed out that the baker was "capable of turning out enough biscuits to supply every man, woman and child in Minneapolis with 35 every day." The owners had a vision of a bakery with large windows so that its sweet treats would be "made in Minneapolis sunshine."

Acclaimed architect Edwin H. Hewitt designed the bakery. A one-story annex and loading dock were added to the northwest side in 1945.
