Viktor Rubinstein was born in Oslo, the youngest of three siblings to Oskar and Rosa Rubinstein. Like his sister Molly Amalie (b. 1913), he was hearing impaired and attended the Ila School for the Hard of Hearing. In 1942, he worked as an apprentice in his uncle Georg David Dsenselsky's sports store, A/S Arild in Oslo. Viktor was also an avid amateur boxer and a member of the Ørnulf boxing club. He was unmarried and lived at home with his parents in Økern in Oslo.

On 26 October 1942, Viktor was arrested by Norwegian police officers and imprisoned in Bredtveit Prison. Two days later, he was transferred to Berg prison camp outside Tønsberg. From here, he was deported on the transport ship Donau on 26 November 1942. The journey took him to Stettin in Poland, and from there to the extermination camp Auschwitz. Upon arrival at the camp on December 1, 1942, Viktor was taken for slave labor. He perished in Auschwitz just a few weeks later, on December 23, 1942.
