Le bâtiment qui abrite aujourd'hui le restaurant L'Ami Schutz a été construit au XVIlle siècle et était à l'origine un immeuble d'habitation dans un quartier écarté de la ville.
En 1975, les murs du rez-de-chaussée ont été transformés en un temples la cuisine traditionnelle alsacienne accueillant des clients venant du monde entier.
