The hotel was started by Foss Brewery in 1900. The establishment was run with varying success by four different tenants. In 1909, Caroline and Christian Boman Hansen took over the lease. They were both from poor backgrounds and Christian had worked as a waiter and Caroline as a cook at the Grand Hotel. Business went well, and after only three years of operation they were able to buy the hotel from the brewery. Since then, the hotel and Theatercaféen have been in the family’s ownership.

When the neighboring building, Brødrene Hals’ Pianofortefabrik, was demolished in 1931, the hotel owners bought and erected a new building on the site, designed by architect Ole Øvergaard. The same architect was behind

a new large extension towards Roald Amundsens gate 1960-61 (now Olav V’s gate). The hotel has since been regularly renovated and is one of Norway’s best five-star hotels.
