A communal brewery is a brewery established by the community. These breweries, like the one in Lauf, often date from the 14th to 16th centuries and allowed citizens, especially craftsmen, to brew their own beer and use the available equipment. Beer, as a staple food, was in high demand, and consumption was constantly increasing. Thus, in 1588, a second, new brewery was needed. Demand was high. The existing brewery was to be overburdened by limiting the number of brews, but this did not solve the problem. Nevertheless, only 16 of the 38 citizens with brewing rights voted in favor. With the steady increase in the number of brewers, another brewery became necessary, especially since the sale of these rights and the beer tax (a tax on brewed beer) were good sources of income for the town. Lauf, with its cool cellars, held a virtual monopoly for quite some time. It exported beer to Nuremberg, and it was cheaper than beer from the surrounding area.
