L'arrière de l'office de tourisme (ancienne halle aux poissons) correspond à l'un des anciens quartiers artisanaux des faubourgs de la cité. Ici, les rives de l'Aure témoignent par leur aménagement de la présence d'anciennes tanneries et teintureries.

La rivière jouait alors un rôle essentiel pour l'alimentation des ateliers et l'évacuation des déchets très polluants. Elle constituait également une source d'énergie indispensable dont les moulins bénéficiaient en premier lieu.

Parmi ces derniers, on trouvait les moulins servant à broyer les écorces de chêne pour en extraire le tanin, substance mise en œuvre pour rendre les cuirs imputrescibles. Les peaux, après nettoyage et épilage, macéraient dans de grandes cuves pendant plusieurs mois. Le travail du tanneur, dégageant une odeur fétide, s'achevait par le séchage des peaux ainsi traitées.

L'artisanat du cuir était très important à Bayeux jusqu'au milieu du XIXᵉ siècle, mais avec une moindre activité qu'à l'époque médiévale. Les tanneries bayeusaines florissantes jusqu'au XVᵉ siècle déclinèrent ensuite au profit d'un autre métier alors en plein

essor la teinturerie. Cette évolution trouve une traduction au XVᵉ siècle par le changement de nom de la rue de la Tannerie qui devient la rue des Teinturiers.

Les couleurs végétales les plus travaillées à Bayeux au Moyen Age étaient le jaune provenant de la gaude (plante cultivée dans le Bessin), le rouge extrait de la garance et le bleu obtenu à partir de la guède.

C'est dans ce quartier, au n°23 de la rue des Teinturiers, ancienne propriété d'un aïeul du célèbre peintre Toulouse-Lautrec, que Balzac séjourna chez sa sœur pendant deux mois en 1822. Bayeux inspira d'ailleurs l'écrivain pour certains de ses romans, tel La femme abandonnée.

The Bayeux tanneries flourished until the 15th century and then went into decline to be replaced by another fast-growing industry: dyeing. This 15th century evolution can be seen in the change in the name of the Rue de la Tannerie - Tannery Street, which became Rue des Teinturiers - Dyers Street. In the Middle Ages, the most used vegetable colours in Bayeux were yellow, red and blue.

For two months, in 1822, the writer Balzac stayed with his sister in this district, at n°23 in the Rue des Teinturiers, formerly owned by an ancestor of the famous painter Toulouse-Lautrec.
