1. Smoke House Marker
Inscription. Fall was a time for butchering the animals that had been fattened over the summer. Since there was no refrigeration, meat from animals butchered on the farm was treated to preserve it from rotting by salting and then hung over a smoking fire in this enclosed building for several weeks. A slaughtered pic would be cut up into hams, ham hocks, pork ribs, pork chops, pork roasts, and bacon. ears and tail could be used to flavor soups, hooves made into gelatin, and intestines used as casings for sausage. The hide could be sold to a tanning factory. No part of the animal went to waste.
