1. Sugarcane - Boiler Marker
This brick sugarcane boiler was built in 1921 and strengthened with an old buggy spring. It was repaired in 1944 and has a chimney, firebox, and cast iron cane vat or kettle.
Boiling raw sugarcane juice into cane syrup was a hot, all-day task, but some pioneer families still continue the tradition. The juice is stirred over a low fire until it thickens into syrup. As the syrup boils, the froth or "polecat" is skimmed from the surface while sediments drop to the bottom of the kettie. About ten gallons of cane juice is needed to produce one gallon of syrup.
Cane syrup was an important ingredient in the pioneer diet and a favorite topping on homemade biscuits.
