1. Olive Mill Marker
Inscription.
This Olive Mill was built around the 1880s. Although it does not date back to the Spanish Period, it does represent how olive oil was produced. The Spanish introduced agriculture to California. Plants like olive trees were grown at the Mission. In early fall the olives were collected and then crushed using millstones similar to the one featured here, or by hand with mortar and pestles. The crushed olives were then pressed to extract the oil. Olive oil could be used in sanctuary lamps, as medicine, for the lubrication of machinery and for cooking purposes.
