Inscription.
In the 19th century, farm families preserved most meats by "smoking." The raw meats (like hams) were suspended above a slow-burning wood fire to flavor and "cure" the meat. Salted meats were smoked at temperatures high enough to dry them of moisture, but not warm enough to cook them.
