1. Mollasses Production Marker
Inscription. The sorghum is cut from the field, the tops are cut off and the leaves stripped from the main stalk. Juice is extracted from the sorghum by running it through the rollers of the press. The juice is then poured into the long, baffled pan called an evaporator. The raw juice is heated two to four hours which removes impurities and reduces water content. The juice must be constantly stirred to prevent burning and occasional surface skimming is necessary to remove impurities. The hot juice becomes molasses when it changes to a thick, dark-brown syrup. It is then drawn off through a strainer into containers.
