Inscription. Written records of this plant's use in China go back more than 2,000 years; how did it arrive in the Caribbean? European colonizers kidnapped and tricked people from China and other countries to move to the Caribbean to work. Plants from these countries traveled with people and are now staples in Caribbean cuisine. Chinese eggplant is often stir-fried, steamed, curried, deep-fried, baked, boiled, and more.
