Inscription. Eddoe is a tropical potato-like vegetable that is a family member of dasheen (taro). Eddoe traveled from China and Japan to the West Indies along with people who were forced to live and work in the Caribbean by European colonizers. Despite this history, the plant remains popular across Caribbean cuisines. Eddoe can be boiled, steamed, fried, roasted, or added to metemgee, a root vegetable soup from Guyana.
