Inscription. NYC's iconic Lower East Side pickle can trace its origins to the vining cucumber plant native to the foothills of the Himalayas. Introduced by Columbus, cucumbers were already being cultivated in America when Brooklyn Dutch farmers began growing them for pickling in the 17th century.
