Inscription.  Fin dall'antichità gli olivi hanno fatto parte del paesaggio del Colle Palatino. La civiltà romana fu quella che più d'ogni altra contribuì alla diffusione dell'olivo ed al perfezionamento delle relative tecniche di coltivazione e di estrazione. I Romani conoscevano talmente bene l'olio d'oliva da mettere a-punto tecniche e strumenti rimasti quasi invariati fino al XIX secolo e, per primi, classificarono gli oli in base alle loro caratteristiche organolettiche. In età Repubblicana, Marco Porcio Catone (234-149 a.C.) e Marco Terenzio Varrone (116-27 a.C.) scrissero i primi "disciplinari di produzione" olivicoli, delineando i fondamenti teorici e tecnici che ancora oggi sono alla base delle produzioni di oli d'oliva di qualità.

Roman civilization contributed more than any other to the spread of the olive tree and to the perfection of techniques related to its cultivation and to the extraction of olive oil. that the techniques and tools they developed remained largely unchanged up to the 19th century. They were also the first to classify oils on the basis of their organoleptic properties. In the Republican era, Marcus Porcius Cato (234-149 BC) and Marcus Terentius Varro (116-27 BC) penned the first ever olive-growing "production protocol", outlining the theoretical and technical foundations that remain at the basis of quality olive oil production to this very day.
