From the mountainous areas to the desert and the tropics, salvias commonly known as sage, can be found growing everywhere in the world except Australia and Antarctica. These members of the Mint Family have every imaginable variation in leaf shape, growth habit and flower color.
Salvia means "to heal" or "salvation" in Latin. The ancient peoples of the Mediterranean region believed it brought immortality and increased mental capacity. Today, only a few of the nearly 800 species of salvias have known uses. Salvia sclarea, Clary Sage, is used as an eyewash and as a seasoning for baked goods and beverages. Salvia officinalis, Culinary Sage, is a flavoring for wine, beer, baked goods, vegetables, meat and salads. The oil derived from the leaves is an ingredient in perfumes, soaps, cosmetics and insect repellents. Culinary Sage is also used medicinally to ease sore throats and mouth irritations and to cool fevers.
