By contrast, most Apalachee lived and worked in outlying areas near their fields and only came to the mission center for Saturday evening prayers, Sunday mass, evening dances, ball games and other special events.
Apalachee living at San Luis ate a variety of foods introduced by the Spaniards including peaches, sugar, and beef. They also adopted European agricultural practices and enjoyed limited access to imported goods such as firearms, cloth, and jewelry.

At 120 feet in diameter, the council house could accommodate up to 2000 people.
Second in size were leaders houses, generally about one half the size (65 feet in diameter) of the council house.
A typical Apalachee home was only 18-24 feet in diameter.
Most Indian households at San Luis were clustered in small hamlets that extended for several miles around the mission center.
